The holidays are rapidly approaching and I'm obsessed with various celebratory meal ideas. What better time to share meaningful meals with family and friends? The December holidays will be particularly special for us this year, as they mark our return to the States from The Big Trip and our reunion with our loved ones after ten months on the road. I can't wait!
Stay tuned for new holidays recipes coming to One Beet soon, but here are a few of my tried and true favorites to get you started.
Holiday Brussels Sprouts - Perfect red and green color combination in an easy, three ingredient dish. These will definitely earn a spot as a repeat dish on your holiday table.
Stewed Red Cabbage with Apples and Potatoes - Again with the holiday colors! This works as a main dish, or as an incredibly flavorful side. It is the perfect combination of savory and sweet.
Carrot and Squash Tagine - Totally delicious and ideal for the vegetarians or vegans in the family. This is also great for everyone looking for a festive meal bursting with nutrients.
No-Fuss Roasted Eggplant Parmigiana - Although this is a new One Beet recipe, I can already tell it's going to be a favorite. I've made it twice in the past two weeks! This is one of those meals that feels fancy without a lot of effort and is appealing to even the pickiest eaters.
Oatmeal Carrot Cookies - And now for the sweet treat - these cookies are the perfect balance point for all the holiday indulgence. They taste wonderful, but skip the dairy and refined sugar.
Happy holiday cooking!
